Résumé : | The field of nutritional sciences has gone through metamorphoses during the past 80?years since Nutrition Reviews was first published. During this time, we have seen the transition from conducting proximate analyses for determining the macronutrient content of food to identifying the essential vitamins and minerals, using foodomics and biomarkers to help us estimate what type of food and nutrients we are consuming, and determining the impact dietary patterns have on health. As such, we have borne witness to the evolution of nutritional sciences from the golden age of the discovery of the essential nutrients required to prevent the certainty of deficiency diseases to the current age of optimizing nutrition to reduce the risk of communicable and non-communicable diseases in both populations and individuals. |
